All our LTO registration confirmations are being emailed to one email address not the email address of the workgroup that created the workspace.

LTO registration confirmations can only be emailed to the one email set in the Land Registry Correspondence Details.
I do have a potential work around for you though.
If you have an inbox that your staff all have access to you can set the email address to that inbox here:
Administrator Tools > Manage Subscriber Details > Land Registry Correspondence Details > Email
