We've sent our elderly client to the post office with her ID docs and quick as a wink she was there and had VOIed. She's sent us a receipt from the Post Office with a Unique Sequence No on it and we have no idea what to do.

Are you registered with the Australia Post VOI service? If so, did you give your client one of your firm's Australia Post VOI forms (with a code on the side which identifies your firm)?
If yes to all, then you should receive a notification from Australia Post Land Title Verification Service that the VOI has been conducted, and you will be able to view the VOI report in their online portal (using the login details Australia Post provided you).
If no to any of those questions, can you provide some more detail and I'll try to respond in the context of your actual circumstances?

In that case perhaps Australia Post did not VOI your client on your behalf?
In this case you may want to contact Australia Post to get an understanding of which service was provided and what your next steps could be.
